Ingredients used in Bendakaya Vankaya Pulusu
• Oil - as required.
• Ladys finger - 10 numbers.
• Brinjal - 4 numbers.
• Mustard seeds - 1 tea spoon.
• Garlic - 7 cloves.
• Dry red chillies - 4 numbers.
• Onions ( chopped ) - 1 numbers.
• Salt - to taste.
• Curry leaves - 2 spring.
• Turmeric powder - 1 tea spoon.
• Tomatoes ( chopped ) - 2 numbers.
• Tamarind pulp - 1 cup.
• Red chili powder - 1 tea spoon.
• Water - as required.
• Coconut milk - 1 cup.
• Coriander leaves - 1 bunch.
Method:
Heat oil in a pan, add ladys fingers, fry them and keep aside. In a same pan fry brinjal and keep aside. Heat a pan add oil, mustard seeds, garlic, dry red chillies, chopped onion, salt, curry leaves, turmeric powder and sauté it till they turn light brown in color. Add chopped tomatoes and cook it well. Then add tamarind pulp, red chili powder, water and cook it with closed lid. Now add fried brinjal, ladys finger and cook it. At last add coconut milk, coriander leaves and switch off the flame. Bendakaya Vankaya Pulusu is now ready to serve.
